Heart Decorated Cookies

Decorating cookies with royal icing can be a nightmare to a beginner if you don't know some key tips!! It flow out of my cookies.




Did some research and I realise that I have to let the outline dry at least 15 mins (to play safe, I outline all the cookies first and wait until the outline form a dry crust) before I can fill in with the royal icing. And it works!






A little gift to AT for our anniversary. Can say it's quite a success!

Royal Icing - key points,

-Royal icing consistency - 10 second rule (see here)
-Outline before flood
-Colouring - Use food gel colouring
-Storage - let the cookies dry overnight before pack them
-Never leave the bowl of unused icing open. Always cover it with damp cloth to prevent it from drying.
-Top cup (for pipping bag to stand) - at the bottom of the cup, put a damp tissue to prevent the tip from drying.

Snowskin mooncake - pandan flavour

中秋节 is approaching.

I love snowskin moon cake so much!! I did some research on snowskin recipe, it's very easy to make. No baking needed. Since it's easy, I decided to make some.

Bought a moon cake mould from Shopnbake. The moon cake design commonly seen is those traditional flower design, so I decided to get cartoon design. Main reason, there's Winnie the Pooh.

This is my first attempt of making the snowskin moon cake. Received some feedback that the skin a little to thick. And the pandan flavour not strong. Need to improve.

Crown Cookies

I see lots of cookies are decorated with royal icing, so beautiful! So I decided to make some crown cookies and try using royal icing to write name on the cookies.

Writing with royal icing is quite a success, but the cookies are bit too thick and a little out of shape.

Chocolate cupcake

I choose to bake chocolate cupcakes for my bf's birthday since he love chocolate.

My idea of the birthday cupcake is, on top of each cupcake there's 1 alphabet of Happy Birthday Alex. The question is, how do I do the alphabet? Using rolled fondant or buttercream icing or royal icing?

I decided not to use buttercream to write out the words, as Singapore weather is a bit humid and it may not hold up well. Then I did some research on royal icing and I happen to see the below picture (from http://sweetopia.net). Immediately I know that's what I want my cupcake to look like.



I always have a lot of problem when it comes to chocolate cupcake or chocolate cake. The texture always taste like fa gao, and I did some research to find out what's went wrong in the recipe. And I can't find any answer. Maybe there's nothing wrong.

I did the alphabets out using royal icing and let it dry for a night. When I tried to peel off the parchment paper, some of the alphabets crack. Well, I have do it again, and this time I did extra more just in case.

Buttercream frosting was not a success, it melt easily, After frosting the cupcake, I have put the cupcake back to the fridge for awhile to let the frosting turn a little harden.


Conclusion, not very easy working with frosting. Oh, I forgot to mention about my helpers. Luckily I have them, if not there will be no nicely done cupcakes.

Angry birds cupcakes

Last minute decided to make 12 cupcakes for a friend's birthday. According to a close friend, he love angry birds which is very popular. So make an angry bird family cupcake for him. This time, I choose red velvet as I love the taste so much (and I have confidence in making red velvet cupcake) and it's not quite common flavor in Singapore if I'm not wrong.

This time I used almost 5 hours in the kitchen making the angry birds. I did not face any problem and trouble except I need to figure how to make the angry birds look like the one in the game. And I think I've manage to make a replica of angry bird in a cupcake form.

And I found out that I have to keep the fondant cupcake away from ANTS!!

Happy birthday, Jun Hui! Happy to see birthday boy like it and happy with the result.

Chanel Cupcake

It was my very first time baking 50 cupcakes for a birthday party. And the theme of the cupcake is Chanel. I'm so clueless with the design, so I did some research on some designs of the Chanel cupcakes.

Actually there are so many of "My first time" when I bake this 50 cupcakes. 

My very first time of baking the Red Velvet cupcake.
The flavor is so popular in the web when I was searching for a list of cupcake flavor for my first "customer".  I have no idea how would it taste like, although I know that it will have a mild chocolate flavor. But luckily I did it, it tasted awesome. I fall in love with it. Gonna bake it again.

My very first time of using rolled fondant.
I bought a tub of Satin Ice rolled fondant since I have no confidence of making one and I do not want to make any unnecessary mistakes. The theme is Chanel which means the color theme is black & white. I bought a bottle of Wilton black coloring gel, and tried to color it the white fondant to black. I could not achieve the solid black. Did some research, many people said the easiest way is to buy a ready-made black fondant. But I was trying to keep the cost low, thus I did more research and finally found out that Americolor coloring gel can give a solid black fondant. Bought it and it really work! 

My very first time spending 8 hours in the kitchen.
I spent almost 8 hours in the kitchen doing the 50 Chanel cupcakes (exclude baking the cupcakes). It's worst than working. But it's fun! And I was so happy that the birthday girl & her guests love them!
Received some feedback that the texture of the cupcakes were a little dry, will improve it the next round.
